Liz (Fox) Stuart is in her second season as Mizzou’s Assistant Athletic Director for Performance Nutrition. She oversees the department’s performance nutrition efforts and works directly with Mizzou’s football program.
Her duties in Columbia include overseeing nutritional care while providing dietary, body composition, supplement, weight, and hydration assessments to build individual meal plans for each student-athlete’s optimal performance.
Stuart develops all meals and menus with performance chefs for Mizzou’s football student-athletes. She also provides individual nutrition counseling and team education, including grocery store tours and cooking demos.
She spent three years at the University of Florida, first serving as Assistant Director of Sports Nutrition (June 2015-January 2017) before being promoted to Director (January 2017-July 2018). With the Gators, she developed and managed the budget for the sports nutrition office, and any food/product/supplement budgets for all sports teams while collaborating with Gatorade to incorporate new products and technology into fueling strategies and managing all new hires in the sports nutrition office.
Stuart’s professional stops also include Assistant Professor and Director of Sports Nutrition at Lindenwood University (January 2011-May 2015) and nutrition consultant with Dietitians ABQ (Albuquerque, NM; July 2018-May 2020).
Her professional certifications include Registered Dietician, ISAK Level 1 Anthropometrist, Certified Specialist in Sports Dietetics and Servsafe Certification through the National Restaurant Association.
Stuart is a 2008 graduate of Saint Louis University (bachelor’s, nutrition and dietetics) where she was a four-year letterwinner with the women’s soccer program. She went on to earn her Master of Science from Saint Louis University in nutrition and dietetics with an emphasis on nutrition for physical performance.
